These cranberry orange muffins have the bright, perky flavors you crave in a user friendly format – a single serve microwaveable muffin! Oh, and did I mention – they are healthy!
Since this is the season for cranberries (I looked it up, they have a very short harvest), what better recipe to share? You can use fresh or frozen cranberries, whichever is easier to find. I hunted for frozen cranberries for nearly two months (over half of the harvest season) before giving up and buying fresh to freeze and enjoy year-round.
No matter which route you decide to take, you are sure to enjoy these delicious THM-S muffins.
4 tbsp Trim Healthy Mama baking blend
1 tbsp coconut oil
2 tbsp water
a small handful of fresh or frozen cranberries
2 tsp dried orange peel
1/2 tsp baking powder
4 1/2 tsp Trim Healthy Mama gentle sweet
Combine all ingredients in a mug and microwave for 1 min 45 seconds, less if you have a very powerful microwave (mine is 700 watts). To test for done-ness, touch the top of the muffin gently. If your finger comes away clean, it’s done. If not, microwave in 15 second increments until done.
