Weekly Meal Plan 2/18-24/19

The first weekly meal plan had some kinks – like not enough side dishes – but hopefully those have been worked out with this meal plan.

As always, keep in mind that these meal plans rely heavily on leftovers – I hate wasting food – and that I designed them with two to three people in mind.

They can always be re-arranged to suit your needs.

This particular meal plan uses Convenient Food, as well as Around The Family Table, the Trim Healthy Mama cookbook, and Trim Healthy Table. 

When a cookbook other than Trim Healthy Mama Cookbook or  Trim Healthy Table is used, I will provide a (hopefully similar) alternative on-plan recipe.

Onward!

Monday:

  • B – (E) leftover granola (from previous week) (THT pg. 361) and a Trimmy Light (THM cookbook pg 428)
  • L – (S) Asian Chicken Salad (CF pg. 173)
  • L – Alternative Recipe: (FP) Zingy Zangy Tuna Salad (THT pg 302)
  • D – (S) Leftovers from previous week

Tuesday:

  • B – (S) Yuck Yum Bitty (THT pg 497)
  • L – (FP) Minute Ramen Soup (THM Cookbook pg. 125)
  • D – (E or S) Grilled Jamaican Jerk Chicken with green beans and either a baked sweet potato (E) or mashed fotatoes (S) (THT pg. 264)
  • NOTES:
  • Leave out or sub on-plan brown sugar.
  • Plan ahead to have your meat thawed (if frozen) and marinating ahead of time.
  • Marinade the meat (I’m using chicken breast for E, you could use thighs for S) and grill following these instructions or bake at 350 for approx. 45 min – 1 hr or until done. The time will differ depending on the meat you use.
  • The last time I made this recipe, I baked it and it was amazing. This time we will be grilling.

Wednesday:

  • B – (S) One-Minute Yogurt Bowl (THT pg 445)
  • L – (E or XO) Sandwich on sprouted or soured bread with lean fillings (for E).
  • D – (S) Power Skillet (THT pg. 66) with Mashed Fotatoes (THT pg. 264)

Thursday:

  • B – (S) French Toast in a Bowl (THM Cookbook pg 266)
  • L – (E) Waldorf Cottage Cheese Salad (THM Cookbook pg. 190)
  • D – Leftovers

Friday:

  • B – (S) Spinach Steamed Eggs (ATFT pg 94)
  • B – Alternative Recipe: Big Bowl Egg Scram (THT pg. 331)
  • L – (E or XO) Sandwich on sprouted or soured bread with lean fillings (for E).
  • D – (S) Slow Cooker Indian Butter Chicken and Melissa’s Amish Broccoli Salad (THT pg 271)
  • NOTES:
  • DO NOT use cornstarch in the butter chicken if following Trim Healthy Mama. The recipe has notes for if you are not using cornstarch.

Saturday:

  • B – (E) Chocolate Waffles with Strawberries (THM Cookbook pg. 265)
  • L – Leftovers
  • D – (S) Barbacoa Pork Tacos (CF pg 84) with 1/2 batch guacamole (CF pg 454)
  • D – Alternative Recipe: Succulent Barbacoa Beef (THT pg 108)
  • NOTES:
  • If making the alternative recipe, consider using boneless pork loin instead of beef chuck roast if you picked it up on sale BOGO at Publix like I did. Just keep in mind it may affect the cooking time slightly.

Sunday:

  • B – (E) Pearl’s Sweatpants Oatmeal
  • B – Alternative Recipe: Big Bowl Cinnamon Oatmeal (THT pg 354)
  • L – Leftovers
  • D – Pork Taco leftovers on a bed of salad greens or spinach
